Since I saw the thread on cooking Prime Rib and it looked like a good idea btw, I decided to tell you what I'm cooking and see what you guys are doing.
We're having a rib fest on the forth. Pics included so drool when you see the results.
There's about 35 pounds of pork and I'm marinating in 2 different mixes. The first is the big pot. I has a mix of home made wine and boones farm orange hurricane. Added the spices you see in the pics as well as some worchester sauce and Itallian dressing. The ribs will be cooked on the smoker for about 45 minutes to 1 hour before being wrapped in foil to cook at low temp with some of the marinade in with them.
The second is just the boones farm in the pan and nothing else until the cooking starts. About 1 hour and then the spices are added. It will be cooked in the pan so the meat will be in a glaze of sorts when done. This is gonna be a long process. I usually take about 6 hours to cook ribs and I'll be starting after work. I should be able to post some pics as I'm cooking. Hope you guys enjoy.

Not done yet with the pics Ty. Here's some more info for you. I'm using 1 smoker and 2 grills so I'll be busy tomorow night for sure. I have chicken, T-bones, and turkey as well. Something for everyone.  It will be cooked with mesquite and pecan wood together so it gets a little balance of flavor.
If anyone needs some mesquite PM me, I have a lot here and it wouldn't hurt to cut some down. You just need to come get it.
