Replacing valve springs using the air tool method is there a maximum air pressure you can introduce into the cylinder ? Or more the better ?

Just enough to keep the valves open. I just used rope in the cylinder and works great. You don't have to worry about losing pressure or whether you are on the exhaust or compression stroke.

too much pressure and it will start turning the engine - it takes almost no pressure to keep the valves closed but because there is a possibility of bumping the valve and breaking the seal/pressure on the valve, it is a good idea to move the piston to TDC

True, you don't have to use anything. However, the rope will keep the valve snug and makes it easier to get those friggin' retainers and keepers back on. ;)
