Is there a way to see what the calculated pulse width or duty cycle is from the volumetric efficiency table? I would like to see how close the injectors are to maxing out.

Pulsewidth

Pulsewidth is available on the dashboard. Got to "file". The drop down will have dashboard setup. Put the values you want to see in the dashboard you are going to log with. Inj DC % is there.

The pulsewidth sensor you want to log says BPW (mS). Injector duty cycle would be the best thing to log for what you want to find out.

Yes, I would like to know the pulsewidth (calculated) without the engine running. Is this possible?

Here's a little excel spreadsheet that will calculate the inj pw for you. Go to:
http://pages.prodigy.net/buickv6/_images/
There's a file there called "quick inj pw calc.xls"

The cells with blue text are the inputs:
CID, rpm, VE, MAP, MAT, etc... and it will calculate the expected pulsewidth.
