Not sure I understand the question
I will have vdo oil pressure sensor for analog gauge and glow shift electronic analog fuel pressure sensor on rail and stock map for boost

I understand I'll be restricted to data flow rate by the aldl's 160 baud rate.

The sensors I would expect to be close to realtime? Not intimate with their inner workings.

I can probably look up the specs. Typically ATOD inputs have a conversation and sampling rate, for instance, a project I work on at work our ATOD's inputs are converted every 500 micro seconds and sampled(read) at 1 millisecond. That would be 1KHz sampling rate.
 
If you didn't require a gauge physically mounted on the fuel rail, and just wanted a fuel pressure signal sent to a device like the ALDL adapter or Reveltronics UTCOMP units, couldn't you just install one of these:

Run the wires to the UTCOMP inputs (for example) and voilà, electronic fuel pressure readings on LED display, for about $35. I suppose you could always add a gauge on the fuel rail later by installing this unit and any desired gauge:

That's how I have my tranducer set up for fp logging on my Powerlogger. I used a 12v powered tranducer though. Have to make sure you power it with the correct volts. You would also need a good mechanincal guage to confirm the trancducer reading is accurate. Not sure if the aldldroid has scaling for matching the transducer's 5 volts range. You can do that with the Powerlogger. Stay away from that Kirban's piece. It wasn't as reliable a seal as I like. There are other better options IMHO.

Same issue here with Kirans piece. I do have a PL, so I'll just use that. I need to pick up the fp, oil and maybe an alky transducer. Definitely getting a fp sensor. Lost my stock engine due to fuel pump failure and nearly lost another one. I just broke the bank on engine and Trans rebuild. It will be a while before I do anything besides street driving with my car. I'm going back to a 5.7tt chip and staying away from WB correction. That nearly got my engine as well, when that sensor went out.
