I've got a Sony 65" HDTV, and I absolutely love it. The picture all depends on the quality of the cable output. When I first brought the TV home, I was disappointed by the picture, because the channel I was watching looked horrible. Then, I turned on a DVD, and I fell in love with the TV all over again. I recently subscribed to HD cable, and the picture is amazing! Some digital channels look good, and then some of the channels just look horrible...
When searching for TV's, another feature I'd look into is the types of zoom available. As stated previously, you shouldn't watch the TV in 4:3 format, so the zoom becomes an important feature on the TV. On my particular TV there is a Wide Zoom, which mostly stretches the corners and cuts off the top and bottom. By doing this, the stretching is less noticeable (unless there is a sports score or banner on the top or bottom of the screen).
Just some more food for thought...
