I have had my diy kit on for less than a year, but have already had 2 nozzles scale up on me. One, a m2 clogged completely. i know that using distilled water would help, but i have heard that distilled will eat up aluminum over time. What are your thoughts?

Distilled water will not have all the calcium and minerals that regular water has. You do not want those in you intake and combustion chambers as they will form deposits

Never heard of it affecting aluminum. Aluminum is very corrosion resistant, except for galvanic corrosion, that is the biggest concern
