Direct wirning/relay for fan; popping fuses

Finished FAST install on a Mustang (sorry but this is great site) and am having some issues with the fan.

From the battery I have an in-line 30amp fuse, to a 30 amp Bosch relay. Fan only has Red and Black wires coming from the motor. Motor has 2 silver "relays" 20 amp/40 amp within its housing.

First, what are the amp requirements and which parts do I need.

Second, since FAST only turns the fan on and off at 181*, what will happen to what I think is a high/low speed fan?

Popped two fuses, but the fan had worked for a while as Im still getting the car tuned for a test drive.
