Which cylinder should I monitor for EGT's?

I will be starting the tuning process shortly and have a PowerLogger. I will be logging fuel pressure, alcohol pressure, AFR, boost, etc... I was thinking about using the last analog input on my PowerLogger to monitor EGT. I was wondering which cylinder is most prone to leaning out before the other five. I'm trying to capture as much data as I can. Any help will be appreciated. Thanks.
 
I thought I had read the front cylinders are more likely to go lean first. While I'm at it, what is a "generally safe" maximum temperature at the exhaust runner?
