Do I need to use the LT1 MAP Sensor along with the 3" LT1 Mass Air Flow Meter also on my 87 GN?

no. but you'll need a MAF translator.
A three bar map sensor is needed if going for one of the popular alky kits for our cars.
I've heard that the ls1 maf's are much better flowing, besides just being a half inch bigger... someone once told me a lt1 doesn't flow much better than stock, but I never saw any data to back that up. Never searched either.
