Yes. Take a hacksaw blade and bend a slight angle on one end. Slip it down the front side of the headrest along the flat bar that the headrest is mounted on (hope that's clear). It might take several tries, but that will release a spring down in the seat and the headrest (including the flat bar that it's mounted on) will slide out.
Yes, the zipper is on the bottom. It does take quite a bit of grunting to get them off and the new ones on. I put mine in my vise (the flat shaft) and that worked well. That way, I could use both hands to remove the old one and put on the new.
