what do you use for insurance?

has anyone found an insurance company that will still do a declared value on your car but not limit how its used? Currently mine is thru Grundy which does collectable cars , but they limit you to shows and related stuff. I'd like to use it for more than that but dont wanna go with typical insurance which goes by blue book value for reimbursement if anything happens. And blue book value is WAAAAAAAY under actual value.

I'm looking for a good insurance company as well, AAA sucks ass.
